Our olive groves are located on the Sannio hills, in an agricultural environment that is tended to throughout the year. Each plant is observed and cared for over time, without forced interventions.

The olive tree is a slow-growing plant that requires constant attention.

Year-Round Care

Work on olive trees is not limited to the harvest period.

Pruning, soil management, and plant control
are carried out throughout the agricultural year.

We intervene only when necessary, respecting the natural balance of the plant and the soil.

Collection

Harvesting takes place at the right time, when the fruit has reached the right balance. It is a delicate phase, carried out carefully to preserve the integrity of the olives.

The harvested olives are quickly sent for milling.

Milling on the same day

The olives are harvested and brought to the oil mill on the same day. This minimizes the time between detachment from the tree and milling, preserving the freshness, aromas, and integrity of the fruit.

It is a precise choice that requires organization and attention, but one that directly impacts the quality of the oil.
