We are in Sannio, in the province of Benevento, a hilly area in the Campanian hinterland where agriculture still follows the rhythm of the seasons.
Climate, soil, air
The Sannio hills are characterized by hot but breezy summers and cold winters, with significant temperature fluctuations between day and night. These variations slow down the ripening of the olives, allowing for the development of more defined aromas and a harmonious structure.
The soils, largely clay and limestone, force the roots to grow deep. It's a silent effort, reflected in the concentration and balance of the oil.
Natural ventilation keeps the olive groves healthy and encourages careful, minimally invasive cultivation.

Our oil is a direct expression of this land.
It isn't made to impress, but to accompany and respect dishes, without overpowering them. Each harvest brings with it the variations of a year, but the character remains the same: that of Sannio.
